Bailey’s Irish Cream Cake

I personally think that every person has a basic human right to receive a fabulous cake on their birthday. My parents always made sure that my brother and I got the exact cake we wanted for our birthdays (white cake with sugary white icing and pineapple filling, and in later years strawberry shortcake), and I suppose that instinct has been instilled in me. And you know, I think it’s a pretty nice one to have.

A co-worker of ours had a birthday yesterday, and being me, I decided the least I could do was throw together a quick cake as a gesture. I wanted something that I could do fairly quickly, a no fail recipe that would come out great without me stressing about it. I decided on an old favorite of mine, my Bailey’s Irish Cream Cake.

Saying that it’s “my” recipe is stretching the truth. I originally received the recipe from a friend in college, who always would bring this cake to any little get together we had. Sadly, my friend passed away a few years ago, and I stupidly lost the recipe. However, the internet is a wonderful thing, because the recipe is pretty readily available, so here you go:

1 package (18 1/4 ounces) yellow cake mix
1 package (4 ounces) instant chocolate pudding mix
3/4 cup vegetable oil
1/8 cup water
1/4 cup vodka
3/8 cup Bailey’s Irish Cream liqueur
4 eggs

Ready for the complicated instructions? Put everything in a bowl, mix it together until smooth, pour into a Bundt pan and bake at 350 degrees for 40-60 minutes. When the cake is out and cooled, make a thick glaze with powdered sugar and Bailey’s, and pour over the cooled cake.

Pretty great huh? Between the pudding mix and the eggs, the cake turns out moist, fluffy and delicious every time. I find that it’s even better if left to sit for a few hours so that the flavors (ie alcohol) can really blend together. It also allows the glaze to soak into the cake and keep it really moist. The best thing about this cake is how incredible it smells.

And yes, the cake was a complete hit at work, and my co-worker really appreciated it. I promise that if you make it for your friends, they’ll love you too!
